Butternut Squash Instant Pot Soup
It's Fall, and while pumpkin spice gets all the glory, don’t forget about butternut squash! Creamy, rich and full of flavor, this soup will fill your belly and definitely help put you in the mood of Fall.
⠀Ingredients⠀⠀
•1 butternut squash, cubed⠀⠀⠀⠀⠀⠀⠀⠀⠀
•1 sautéed onion⠀⠀⠀⠀⠀⠀⠀⠀⠀
•12-16-ish oz. bone broth⠀⠀⠀⠀⠀⠀⠀⠀⠀
•1 can coconut cream⠀⠀⠀⠀⠀⠀⠀⠀⠀
•1-2 Tbsp olive oil⠀⠀⠀⠀⠀⠀⠀
Directions
Sauté the onion in some olive oil directly in the instant pot.
Add the butternut squash and bone broth.
Cook on high for 8 minutes. ⠀⠀
Release steam and add the coconut cream.
Using an immersion blender, blend the cooked soup while in the instant pot. If you don’t have an immersion blender, transfer to a high powered blender and blend until smooth.
Add salt to taste and serve or store. Glass mason jars work great for portioning this soup out to take with you in the morning when time is short.
